The power of Chia (& chia banana cake recipe!)

So, the lovely ladies at Tone it Up have long told us about the benefits of Chia seeds (see here)….and yet I have only just got around to buying some!! (naughty, I know, but I’ve been using flax seeds so far…one new thing at a time!)

My husband and I bought one bag of chia seeds and one bag of chia powder….we have started to use the chia powder today and it’s really good!! I have already had a spoonful sprinkled on my dinner and another in some yoghurt with honey :) AND there is a banana cake cooking in the oven as I type with chia powder in it :)

Now, as I’m pregnant I have become particularly interested in the benefits of chia seeds~ They are an EXCELLENT source of nutrition!

Chia seeds have been used for thousands of years in South America. They are a good source of Omega-3 and -6 (anti-stretch marks and helps baby’s eyes and brain development!), protein, all 9 essential fatty acids are packed with soluble fibre and are high in antioxidants, calcium, iron, manganese and phosphorous.

If you soak chia seeds in water for more than 10 mins they take on that water and for a gel. When you eat/drink it this makes you feel full and helps the stomach break down carbs more slowly- which is good to control blood sugar levels and is a slow release energy source!

And, the fibre will definitely help pregnant women :)

RDA is between 2 teaspoons to 3 tablespoons a day….I think I will stick to a table spoon a day.

Chia Banana Cake Recipe!!

1/2 cup low fat olive oil spread (125g)

1/2 cup raw brown sugar (150g) or add stevia

2 eggs

3 ripe bananas (cut into very small pieces)

1.5 cups flour (I used 1 cup wholemeal flour and 1/2 cup of white self raising as this lightens the cake for others, but if I’m just making for myself it’s all wholemeal!) (190g) as I’m pregnant I am eating wholemeal things, although after birth may try to look for an alternative….maybe protein powder???

60ml milk/soya milk or almond milk

4 table spoons chia powder


Mix butter, sugar and eggs in bowl

Add the banana pieces and flour and mix well

Add the milk and chia powder and mix again

Then put mixture into non-stick loaf tin and cook at 170 degrees for 40 mins!!
