Thai ‘yum’ salad
5 sticks of celery finely chopped
Handful of tomatoes roughly chopped
1/2 cucumber chopped
1 onion finely chopped
chicken (I used leftovers, but 1 chicken breast will do)
2-5 birdseye (Thai) chillies- depending how hot you want it!
juice of 1 lime
1 teaspoon of brown sugar
1/2 teaspoon salt / or 2-3 tablespoons fish sauce
splash of water
To make the sauce you need to bash the chillies, sugar, fish sauce and sugar to bruise and mix everything together then add the lime juice and water. Add this sauce to the chopped salad….. tastes soooooooooooo fresh and good!!!
