So I have been inspired by Simply Health this week and their infographic about eating for a healthy smile. We decided to make a dish that we both love, oriental inspired seafood soup (yes, my husband is Thai so gives me lots of good ideas!) Which consisted of salmon in green tea panko breadcrumbs with soba noodles in a seafood broth. With a side dish of Asian slaw. It’s healthy and good for our teeth too! who knew?! I love that purple cabbage was on the list of food good for your teeth as it’s packed full of vitamin C and vitamin A. Vitamin A is an essential nutrient that helps to develop and maintain healthy teeth and vitamin C is important for preventing gum disease. I absolutely love purple cabbage in salads, and this salad goes well with the soup!
Ingredients (serves 2)
Salmon x 2
Mixed Seafood x 2 handfuls
Soba Noodles x 2 serving portion
Fish Stock/water x 2 pints
Ginger x 1 thumb size cube
Green Tea x 2 bags
Panko Bread crumbs
Garlic x 2 cloves
Spring Onions x 4
Japanese Soy Sauce
1/4 Purple Cabbage shredded
1 carrot shredded
3 tablespoons Apple Cider
1 teaspoon Sugar
½ teaspoon Salt
Drizzle of Vegetable Oil
Splash of Pepper
Fresh Chillies- to taste
Mint to garnish
Pour two pints of Fish Stock into a sauce pan using moderate heat, with it add a green tea bag, few slices of carrot, a thumb size piece of peeled ginger, spring onion and few drops of soy sauce. After 3-4 minutes, take out the tea bag, close the lid, turn down the heat and just let it simmer away. The longer you leave it, the more flavour you will get out of the carrot, ginger and spring onion.
For this, you will need to have three plates in front of you. The first will be for flour, the second is for a beaten egg and the last is for panko breadcrumb which is mixed with a bag of green tea.
Dust the piece of salmon in flour and then dip it in beaten egg and coat it very well in panko breadcrumb and green tea powder (cut the teabag open and just mix it in with the breadcrumbs).
Make sure you put enough oil in a frying pan, about half way up the piece of salmon. You should be using semi low heat and wait until the oil starts to smoke before you put the fish in. Make sure you put the piece of fish in away from you so there is no risk of you burning yourself. When one side starts to turn golden then flip it over carefully. It is done when it is nice and golden all the way around. Take it out and drain it on kitchen paper.
Slice a small piece of ginger into match sticks and fry it in the same oil that you fried your salmon in. Make sure you keep your eyes on it as the ginger will burn very quickly. When it is crispy, take it out, drain well and set aside.
In a saucepan of hot boiling water, add a pinch of salt and your portion of soba noodles. After a few minutes when it is done, run it under cold water to stop the cooking process and drain it very well. Drizzle a few drops of sesame oil for flavour and to prevent the noodles from sticking.
How to Assemble the Dish
Put the mixed seafood in the soup saucepan to cook gently, this should only takes few minutes. Put noodles in a bowl and the piece of salmon on top. When the mixed seafood is cooked then ladle the piping hot soup on top. Discard the thumb size piece of ginger but keep the carrot and spring onion. Finish everything off with few more drops of sesame oil but be careful as it is very powerful stuff and garnish the whole thing with crispy ginger bits and few slices of fresh chilli.
The easiest way to make this dish is to use your blender (yes, that thing that’s collecting dust in your cupboard). In goes the purple cabbage and carrot. As for the dressing, it is very simple indeed! Crushed half a clove of garlic and mix it in with any type of vinegar, in my case I used apple cider vinegar. Add a teaspoon of sugar to balance out the acidity and add crushed chilli as well as a pinch of salt. That’s it. For this slaw, you can dress it in advance. The longer you let the purple cabbage and carrot pickle in the dressing, the more delicious it will become. Add a few leaves of mint at the end just finish the whole thing off nicely. This quick fresh salad adds a nice contrast to this bold and intense noodle soup.
