Organic Vegetable Box Outcomes…..
So, I blogged about me deciding to finally get a vegetable box delivered weekly here. I am so glad that I made the choice. Here are the first 2 boxes:
Week 1: Tomatoes, Broccoli, Carrots, Beans, courgettes, leeks, cabbage and kale
Week 2: Beetroot, Raddichio, squash, cabbage, carrots, leeks, parsnips and romanesco & recipe book
Not only are we spending less money per week on food (as before I was going to M&S nearly everyday for something to go with our dinner/lunch and ultimately buying things we didn’t need and spending far too much) but we are eating loads more vegetables!! I eat a lot of veg anyway as I was a vegetarian for 11 years (until I lived in a remote village on the Thailand-Lao PDR border and survived on rats, squirrels frogs, tadpoles, insects and even tried monkey….this was meat to survive and ultimately changed my perspective on meat eating and now I eat fish and some free range, locally produced meats).
We were worried that we wouldn’t be able to get through a whole veg box in 1 week, but we were wrong! Making the decision to spend £13 a week on vegetables made me make sure I used up everything and get creative in the kitchen. By spending more money on veg, we also spent less money on other things- like M&S side salads. In addition, my husband hasn’t bought one Fuller for Longer meal or Tesco 3 for 2 meal since we got the veg box!! whoo hoo. This saved us loads as he was getting them often, and it’s improved his health too- he only said to me last night that he has felt less bloated in the last 2 weeks!
Today is Thursday- we get a new veg box tomorrow and we still have some beetroots, a couple of carrots, 1 parsnip and a romanesco in the fridge. So tonight I think I’ll make stir fried romanesco with chilli and garlic and maybe slice the carrots and parsnip into the stir-fry too. For the beetroots I’m still deciding between beetroot chocolate brownies or beetroot carrot cake (or just boiling them and using them in a salad, or roasting them with the carrots and parsnip, which would be the healthier options…but not very adventurous!).
Here are a few things we’ve cooked up the last 2 weeks my apologies for the bad photography- my photos always look better in daylight and we generally cook dinner when it’s dark outside!




The vegetables tasted really good and they kept fresh all week…..the kale kept for over a week! Also in each box you get free recipe cards that are really useful!! For example I’ve never cooked romanesco before so am using the recipe from the card!
